Mint Strawberries with Sichuan Pepper

1 cup fresh mint leaves, chopped

1 cup sugar

1 cup water

½ cup fresh strawberries, halved

1 teaspoon grated Sichuan pepper

Mint ice cream


Mint Syrup

  1. In a small pot, heat one cup of water until it bubbles to a boil.
  2. Add a cup of sugar to the water. Stir continuously until it dissolves.
  3. Once the sugar has disappeared, reduce to low heat and add the fresh mint leaves.
  4. Let the mint heat in the syrup for 15 minutes. Remove the syrup from the heat and allow it to cool.
  5. Once the syrup has cooled, strain it through a fine sieve.
  6. Refrigerate the syrup.

Mint Strawberries

  1. Put the halved strawberries into a mixing bowl.
  2. Add a quarter cup of the mint syrup and one teaspoon of grated Sichuan pepper.
  3. Mix the ingredients together until all the strawberries are coated with mint syrup.
  4. Fill serving glasses with the minty strawberries.
  5. Optionally, add scoops of mint ice cream.
